Standard parboiling applies identical conditions from a potato's surface to its centre. At pH 8.5-9, the surface chemistry differs: alkalinity accelerates starch gelatinisation at the outer cell layer, rupturing and roughening it. Steam-drying deepens this texture further.

In a 220C oven, this surface rapidly dehydrates and Maillard-browns under a thin coat of oil. No heavy oiling needed.
